Happy Island designer Lisa Burtin has spent the past decade creating unique, eco-friendly and eco-conscious designs inspired by the islands and islands’ natural environment.
She is currently working on a range of cookies that include a range for men and women, a range inspired by plants and the sea, and a range called Island Cookie that is for people of all ages and levels of taste.
“There’s a lot of cookie innovation happening right now,” she said.
“I think that’s really exciting because we can use that to create something that’s truly new and unique.”
Burtins cookies have inspired her friends, colleagues and even her boss, who is now making cookies for the brand.
“They’re amazing cookies,” she explained.
“When you look at them, you’ll say, ‘That looks like a cookie.’
And they’re not even cookies, they’re really pretty.”
